Having lived all over the world, I have been exposed to a wide range of cuisines and cultures. Like many others, I enjoy eating and have had to turn to myself in attempt to replicate the taste and feelings of my childhood.
I don't have a favorite cuisine but my best culinary memories were from the "Hawker Centers" in Singapore. These food centers usually consisted of a bunch of tables surrounded by small stalls specializing in a few dishes. These stalls ranged from Indian curries to noodle bowls and hamburgers.

My Wife Erin is from Baton Rouge and so we have spent a lot of time in the South. Southern cuisine is one of the most heart warming cuisines out there. Over the last few years I've been experimenting with different smokers ranging from electric bullets to portable kitchens and my latest toy has been a double barrel offset smoker:
Last thanksgiving, I threw in a 26 pound turkey at 1 am and filled the bottom chamber with a combination of natural charcoal and Pecan wood and went back to bed. 16 hours later we enjoyed a scrumptious well flavored bird. This 350 pound beast is one incredible cooking apparatus!
WINE
Last but not least is my fascination with wine making. It all started in 2002 when I got involved with an Italian family out in New Jersey and made home made wine the old fashioned way, After a few years and mediocre results, I decided to start my own operation. In 2008 I submitted one of my merlot wines to the worlds largest amateur wine competition and fetched a GOLD. You can download the wine competition results here.
